Pumpkin Pie Quinoa Oatmeal

This is Pumpkin season!!! Mmmmm. Pumpkin pie is my faaaavorite, so I thought I would get creative and make oatmeal that tastes like pumkin pie. Ooooooh, it turned out good! This recipe is gluten-free, dairy free and sugar free. Also, quinoa is considered a pseudo grain because it is acually a seed. So this recipe is grain free too! WooHoo!!!


Quinoa is one of only a few plant foods that are considered a complete protein, containing all nine essential amino acids - these are the amino acids that our bodies cannot produce and, therefore, need to consume. This makes quinoa a great dietary choice for vegetarians and vegans.(1)

While all grains are a good source of fiber, you get the most bang for your buck when it comes to quinoa. One cup of quinoa contains 5 grams of fiber, while a slice of whole wheat bread  has just 2 grams of fiber.  Best known for its role in promoting regular digestion,  fiber is good for more than just relieving constipation. Fiber has cardio-protective effects by helping to reduce  high blood pressure and lower  cholesterol. (2)


Ingredients:


1/2 cup @gogoquinoa quinoa flakes 2/3 cup almond milk 1/4 cup pumpkin puree 1 tbsp coconut palm sugar 2 tablespoons maple syrup 1/2 pumpkin pie spice 1/2 teaspoon cinnamon 7 to 8 pecans


Directions:

Heat the milk in a pan, then add all the ingredients stir and let sit 1 minute. Top with pecans. Super easy!
