Gingerbread Pancakes
Ingredients
⅔ cup non-dairy milk
1 flax egg (1 tablespoon freshly ground flax + 3 tablespoon water)
1 tablespoon blackstrap molasses
1 tablespoon chia seed
1 teaspoon pure vanilla extract
2 tablespoon xylitol
⅔ cup quinoa flour
1 teaspoon gluten-free baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
⅛ teaspoon ground cloves
1 tablespoon coconut oil
Instructions
Combine milk and chia and let sit for 10 minutes. Mix the dry ingredients in a separate bowl, then add to the wet ingredients and blend until just mixed. Preheat a pan using coconut oil and drop a ¼ cup at a time. Cook for 3-4 minutes, flip and cook for another 2-3 minutes.
